1. Rita's Carob Pecan Clusters
2 cups of pecans
1 cup of carob chips
½ cup of rice syrup (purchase at health food store)
1 t. vanilla
pinch of salt

Roast pecans in cast iron skillet under medium low heat until fragrant being careful not to let burn. Add carob chips and as they are melting add rice syrup and salt while stirring constantly. When carob chips are completely melted add the vanilla and stir. Using the wooden spoon drop the mixture into clusters onto a lightly greased surface (I use a large platter). Cool and remove from the platter onto a pretty plate and serve. I even have individually wrapped these clusters and included them in packages to my college kids. Everyone loves this quick and easy desert that takes less than 10 minutes to prepare.

2. What's for Dinner? Roasted Vegetables in a Skillet
This afternoon my daughter Vanessa brought home a girl movie for the two of us. Since I spend many evenings on the phone the afternoon is a great time for us to chill together. We knew if we were going to watch a late afternoon movie we had better put dinner on so she scrubbed and chopped the carrots in hunks while I peeled (optional) and quartered the small organic potatoes and chopped the onions. We were done in 10 minutes and were off to watch our movie. When the movie was finished a great aroma was coming from the kitchen. We then poured the vegetarian chili on top of the roasted vegetables (soy cheese optional) and heated a few minutes more and supper was done.

We used:
10 peeled and quartered potatoes
6 peeled and cut in hunks carrots
1 large onion chopped

Add above to oven dish sprayed with olive oil. Cover with oven lid or foil. Cook in moderate oven for one and a half-hour. Then add 2 cans of vegetarian chili and return to oven until heated through.

This meal is easy enough for kids to do and beats eating fast food out any day! We have also used this dish as a great campout dinner. We put individual packets of vegetables in foil and make sure we put them on early enough in the day to get done. We also like to experiment on the vegetables using green peppers, corn, or zucchini. If chili is not used then we brush a mixture of olive oil and tamari on top of the vegetables.

4. Vegetable Lady's Natural First Aid Kit
I have put together a little bag that I have given my college children (especially important for Hilary studying in Spain) because I know having what you need when you need it is crucial. I have a pill tackle box and a waterproof zipper bag from a backpacking store that holds the pillbox nicely. There is enough space around the edges for a bottle of Life Plus COLLOIDAL SILVER spray and a bottle of Life Plus TEA TREE OIL. There are plenty of divisions in the pillbox for the supplements I take while traveling and for the items needed for emergencies. This kit is ready then in a flash for those unplanned times of sickness and accidents and is also easy to pop in a suitcase or backpack at a moment's notice.

In addition to the supplements I have listed on the next page I put a couple of packets of dried Miso Soup with sea vegetables (purchased at the health food store) that can bring nourishment and provide strength to a sick person with only some hot water available. Our Natural First Aid Kit

1. Combat is a product that is needed on hand at the onset of illness. If you wait until you need this product to order it you have already missed an opportunity. My kids swear by Combat. Everyone around them may be sick and they will be great because they have taken their Combat as soon as they feel sluggish, etc.

2. Alko-Mar has the ability to boost the immune system on a long-term basis.

3. Proanthenols are needed in times of stress when our body needs more help with free radicals. We up our daily dose when stressed.

4. Magnesium is helpful with muscle pain, cramps, or even headaches.

5. Colodyne is important to be used on a daily basis, especially if not doing the Biobasics, and most important when we are sick because we know the colon is where most of our problems start. Our family secret is to clean the colon the minute we are feeling bad. I believe that is why out of our five children none of them have had to have antibiotics. The Colodyne has various fibers and herbs to help cleanse the lower intestine, especially the colon. When I say cleanse, I mean heavy metals, some parasites, and undigested food particles are affected. That is why Colodyne is a great product (or the Biobasics which has the Colodyne in it) to take along while traveling. Many people pick up intestinal parasites especially while traveling abroad and think they have food poisoning. The Colodyne is like having an insurance policy.

6. Wonder Gel is great to have on hand to apply topically for aches and pains and works well penetrating in to the needed muscles and doing its healing work.

7. MSM lotion is soothing also for aches and pains; it worked well on my skin after too much sun on the beach. Good all round lotion.

8. Colloidal Silver spray had been proven to be useful against many different infections. Usually, an antibiotic kills a half dozen or so bacteria, but silver kills some 650. Resistant strains do not develop to silver like they do with antibiotics. We spray it in our eyes or throats; it even works well with pets. This is a safe and effective alternative product to antibiotics. Every family needs this product in their medicine kit.

9. Tea Tree Oil is a first aid kit in a bottle. I have used tea tree oil for over 20 years for all kinds of problems. It is an antiseptic and antifungal weapon and bugs hate it! We have used it for sore throats, earaches (diluted with olive oil), all kinds of bug and insect bites, bacterial or fungal skin problems, burns, cuts, and on and on. Next month I will talk more about tea tree oil.

10. Somazyme is an enzyme to be taken away from food (not to be confused with Sustenase that is to be taken with food) so that it can go straight to the blood and do its work. Somazyme is a proteolytic enzymes that is a scientific formula of nutrients, bio-cultures, stabilizers, activators and anti-inhibitors that nutritionally support the immune system and help to create many other healthy functions. When taking Somazyme away from food, it breaks down larger molecules of toxic overload in the blood. It is a little like Pac Man cleaning the body of metabolic waste. It is good for the immune system and circulation and inflammation therefore speeds healing. My mother tripped and fell (she is 79) and found she had a severely bruised rib that was extremely painful. After taking the maximum amount mentioned on the bottle for 2 days she no longer had any pain. (Her doctor had told her the pain would be there for 4- 6 weeks).
