~Summer Vegetable Medley~

1 onion, chopped
2 T. sesame oil
2 quarts fresh green beans, snapped
2 t. salt
2 zucchini, cut in half circles
juice of one lemon
1 red pepper, chopped

Sauté onion for 10 minutes in sesame oil. Add green beans and cook 10 minutes. Next, add zucchini and cook 10 minutes. Last, add the red pepper, sprinkle salt and simmer 2-3 minutes. Before serving, sprinkle the lemon juice over all. Serve immediately.
