~Salmon
Croquettes~
1 can salmon, de-skinned
and drained (keep the liquid)
1 cup rice, cooked and kept warm
1/2 onion, minced
2 T. tamari sauce
corn meal
canola oil
Mix the above together and firmly form into a ball. Flatten to a 3/4-inch
thick patty. Use liquid, if needed. Roll in corn meal and cook in hot skillet
with canola oil on medium heat (water should sizzle) until golden brown on
both sides. I serve this dish with fresh green beans that I have sprinkled
with dill and tamari.
