Pumpkin Pie~
1 can unsweetened pumpkin
1/2 lb. tofu
2/3 cup maple syrup
1 1/2 t. cinnamon
1 t. cloves
1 t. vanilla
pinch of salt
1 unbaked whole wheat pie crust
In food processor blend the tofu and spices until thoroughly smooth. Add syrup
and pumpkin until well mixed. Pour into unbaked pie shell and bake 1 hour
at 350 degrees. Serve with Tofu Topping.
