~Hearty Sweet Potato Muffins~

1 1/2 cups sweet potatoes, grated
1 medium sized carrot, grated
2 1/2 cups spelt flour or whole wheat flour
2 1/2 cups quick oats
3/4 cup sunflower seeds
1 cup nuts, chopped (pecans or walnuts)
3/4 cup dates, chopped
1/2 cup unsweetened coconut flakes, shredded
1 T. cinnamon
1 T. baking powder pinch of salt
1/2 cup unrefined canola oil
1/2 cup maple syrup

After thoroughly mixing the first 11 ingredients together, stir in the oil and maple syrup. Gradually add 2 1/2 cups of water or enough to make the batter spoonable (between cookie dough and cake batter consistency). This recipe makes 12 muffins by filling the greased muffin tins very full. Since it doesn’t have eggs, it will not be a problem to fill the tins so high. The muffins are nice and large. Bake 350 degrees for about 20 minutes.
