~Pistachio Rice Pilaf~

2 1/2 cups brown rice (uncooked)
2/3 cup shelled pistachios
2/3 cup unsweetened shredded coconut
4 cups boiling water
1/2 t. salt
1 T. canola oil
1/4 t. nutmeg
1/4 cup small date pieces

Wash rice, then roast in skillet until dry. Add coconut, salt, spices, and oil. Add boiling water and dates. Cook 40 minutes on simmer. Meanwhile, roast pistachios in skillet over medium heat until fragrant. Watch carefully so as not to burn. Before serving, add roasted pistachios. Stir and fluff with a fork.
