~Collard
Greens~
My family loves collard,
kale, turnip, or Swiss Chard greens served with Ume vinegar to taste. You
can find the Ume vinegar in the macrobiotic section of your health food store.
Wash and pull leaves off the stem (you can stack the leaves, roll and slice
for a fancier ribbon effect). Chop stem in small pieces. Bring small amount
of water in saucepan to boil. Add stems and cook for a few minutes before
adding greens. Add greens and continue simmering until greens are bright green.
Simmer a few minutes more (don’t let the water boil away) and then take off
burner. Serve with Ume vinegar sprinkled on top.
