Who is the Vegetable Lady?
Rita Cheek is the wife of a loving husband, mother of five radiant children,
cook extraordinaire, patient teacher, and inspired writer. The passion for serving
nutritious and delicious food hit Rita soon after her first child was born over
25 years ago.
Rita has her bachelor's degree in education and later studied nutrition at the
Vega Center in California. Rita and her husband, Randy, owned and operated a
natural foods restaurant and cooking school featuring vegan and macrobiotic
cuisine in the Dallas, TX area. Later, Rita did nutritional consultations out
of a clinic in Richardson, TX. Most of Rita's knowledge about nutrition has
been centered around figuring out what has worked with her large family.
